Cafriela de Frango from Guinea-Bissau Food Recipe

ingredients
2 chickens , articulated medium
2 tsp salt
10 chillies chopped
5 cloves garlic, crushed
200g/7oz onion, sliced
3 lemons , juice only
salt
1 tablespoon vegetable oil

Method of preparation

Season the chicken pieces with salt and marinate in a bowl with garlic , chilli, half of chopped onions and lemon juice . After a few hours in the refrigerator , add the oil and transfer the mixture into a large saucepan or casserole .
Add a small cup of water and cook over medium heat , covered, for 30 minutes, until the chicken is cooked , adding a little water if it is drying up . Strain and reserve the excess liquid , and finish by grilling the chicken for 15 minutes or more on a barbecue or in the oven.
At the same time , return the liquid to the pan and reduce , adding a little oil and the rest of the sliced ​​onions . Cook over medium heat for twenty minutes , adding more lemon juice and pepper if you like. When the chicken is browned , place it on a serving dish and pour sauce over .
