How to ice cupcakes with poured fondant

Liquid flux is a liquid version of the rolled icing used to cover fruitcakes .

Brush cupcakes domed with warmed apricot jam that was sieved to remove lumps.

It is important to cool completely if cakes are sealed and ready to be iced .

For a smooth and glossy finish, start with icing which has a homogeneous flowing. Before diving , hitting the bowl of frosting repeatedly against the work surface to get rid of any air bubbles.

Hold the cake upside down and dip it into the glaze . Lift the cake and shake firmly in a tight circular motion to remove any excess icing. Stir based in the bowl between each dive so it remains smooth and fluid.

Allow each cake to form a crust before diving for a second layer. Two thin coats are more like a thick layer.
Leave the cupcakes to define a glossy finish before serving.
